Preparation (Previous Night)

• Bread Preparation: Ensure there are at least 2 bags, maximum 3 bags of bread in the refrigerator
• Setup (Next to Sink): Prepare the following items referring to photos
  • Toaster (toast level setting 2)
  • Toaster usage instructions
  • Bread tongs
  • Plates
  • *Bread will be prepared in the morning
  
• Setup (Counter Without Sink): Prepare referring to photos
  • Put away snacks
  • Empty the electric kettle and refill with fresh water
  • Place tea bags on the blue shelf
  • Prepare 4 glass cups
  • 3 butter knives and 1 gray small spatula for strawberry jam
  • *Jams will be prepared in the morning
  • Winter season: Take jams out of refrigerator and place on top of kitchen refrigerator
  

Preparation (Same Day)

• Start Time: Arrive at least 15 minutes before breakfast service starts and complete preparations
• Coffee Machine: Check milk level
• Bread: Place in case and put on stainless steel wagon
• Jam & Butter Placement: Rinse blue cloth once and wring it well, place under jam jars (*non-slip)
  Remove lids beforehand and wash them in the kitchen
• If anything was not prepared the previous night, set up equipment and arrange the venue referring to photos
  

  
• Shortly before breakfast starts, place signage next to the stairs on the 1st floor
  *Easel is located in the bicycle parking area next to the stairs
  

Guest Service

• Greeting: Welcome guests with a smile
• Review and Store Confirmation: Record date, store, number of guests, and arrival time in the spreadsheet

  Review Request Guidelines

  • Booking Sites (Booking.com / Agoda, etc.)
    → One review per group is sufficient.
  • Google Maps Review
    → Please request one review per person if possible.
  • Groups of 5 or More
    → They often book 2 or more rooms, so please request at least as many reviews as the number of rooms booked.
    It's fine to ask after breakfast, so please request reviews from as many people as possible.
  • Namiki Property (Dormitory)
    → As this is a dormitory-style accommodation, one review per person is required.
• Milk: If you hear a louder steaming sound than usual, the milk is running out. Please replace it.
• Replenishment: Promptly refill bread and other items when running low
• Dish Cleanup: Clear used dishes and wash them
• Table Maintenance: Regularly wipe tables and drink counter after guests use them

Cleanup

Start 30 minutes before closing

Jam Refilling: Refill jams one type at a time

1. Disinfect the container with alcohol
2. Put new jam at the bottom
3. Put the contents from the used jar on top
4. Smooth the surface and wipe the edges
5. Wash the empty container promptly and use it for the next type

TIP: For chocolate spread and peanut butter, transfer neatly referring to photos.

Good vs Bad Examples After Transfer

Dishes: Wash and dry used dishes

Drink Corner: Put away breakfast equipment and wipe the counter

Toaster: Remove crumb tray, wash, dry, and return to shelf

Toaster Instructions: Return to shelf

Bread Case: Return remaining bread to bags and refrigerate
Clean crumbs inside case with alcohol and paper towels
*If dirty, disassemble and wash thoroughly

Jams: After completing refills, put lids on and refrigerate

Table Cleaning: Wipe tables with alcohol spray

Put away 1st floor signage

• Easel: Bicycle parking area next to stairs
• Poster: 2nd floor kitchen

Floor Cleaning: Vacuum (or sweep), mop as needed

Coffee Machine: If tray is dirty from milk, remove and wash
Empty the grounds container
Refill coffee beans or chocolate powder as needed

Drink Server: Wipe with alcohol if dirty

Waste Disposal: Sort and dispose of trash

Inventory Check: Check food inventory, take photos and report
